Zucchini Loaf Cake.

 Ingredients:
 2 1/4 cups Sugar
3 Eggs
3 tsp Vanilla Essence.
1 cup Vegetable Oil.
1kg grated Zucchini.
2 cups Self Raising Flour
 2 cups Wholemeal Self raising Flour
1tsp Salt
1tsp Bi Carb Soda
3 tsp Cinnamon
1 Cup Sultana's
 Method:
1. Beat eggs and gradually add sugar continually
 beating till light and fluffy.
2. Fold in Vanilla Essence, Oil and grated Zucchini.
3. Fold the rest of the ingredients stirring as you go.
 (the mixture does seem a bit runny but will be fine)

4.Line 3 loaf tins with baking paper and pour mixture 
into tins evenly.
5. Place in centre of 180 (fan forced-160) degrees C oven 
and bake for 1 1/2 hours or until golden brown and a skewer
 poked in comes out clean.
 Turn onto a wire rack and let cool.
  Ice with favorite icing... cream cheese frosting is nice
but as my girls are allergic to cheese I use a butter frosting.
 1 Tbsp of butter or marg
1 Tbsp of milk
 add this to 1 1/2cups of icing sugar
and stir, adding more milk or icing sugar
 if needed...spread onto cake and top with coconut if desired.


 Yummy...enjoy with company, served with a cup of tea!
 Hope you like this and do try it...it's a very moist cake.
 Most will not realise it has a vegetable in it..
 My friend who came to visit me said it was
the best cake she has ever tried... it may well be!

A week of....

busy busy little girls...
 It's been school holidays here and they
 have enjoyed the lazy mornings and crafty days..
 Mummy enjoyed not having to rush around and also
 was thrilled Daddy was home to help do stuff!
 Like painting the girls bedroom wall...
 "Shocking Pink Crimson".....  so so so shockingly hot pink..I love it
 and so do the budding artist's who are allowed to paint a little
 before Daddy did the final coat... aint this cute?
 I did get quite ill over Easter which was a dissapointment 
as we were heading to Victoria for Easter but had to cancel.
This last week I have been very slow and tired...recouperating
so I am taking it easy...well easy for me anyhow.
And all from the nasty chest infection that turned into pneumonia
 and managed to zap my energy...oh I was very run down
 But I am on the mend and did manage to sew a few things...
 I caught up on my SKOW blocks...
 only a little bit of stitching to go and I can post finishes.
Daddy got all soppy when I was preparing the rainbow block and
 not from the rain... it was nice and sunny actually...
 He decided to do some chalk art outside my kitchen window for me..

Oh it cheered me up for sure.... I love him so much!

 I decided to sew some blocks together for the girls new quilts,
well their first single bed quilts.. looking so bright and cheery

 Some Stargazer blocks and I just love how these come together so quickly.

 A ride on the see-saw made us laugh... 
Daddy took us to the beach for an icecream and some fresh air...
 The girls had a blast and I got the delightful fresh air I needed.

Bunny Tales from MissJ and Miss K

This morning I have been busy getting ready
to go to my friend Judes for a sewing day.
 Yeah Yeah Yeah...I'm happy dancing.
 A sort of cyber sewing day with Fee...he he
 Fee's having one with a few friends and I said we'd join her...LOL
 Are you able to join us too?
 Whether your with company or on your own?
 Just stitch and know some lovely friends will
 be thinking of you with fondness and great memories.
 I asked Hubby and as being ill for a few weeks
 he thought it a good idea to just go and sit and stitch, and REST
 Plus Jude will spoil me with her wonderful company and her
 Cheeky Lickin soup..... he he
 I packed my basket with way too much
to get accomplished in one day.
 I have wishful thinking. I'm hoping to get lots sewn together.
 While I was getting packed my darling girls were coloring in.
 Miss J was showing Miss K how to draw Easter bunnies.
 I thought I would share the picture and
 Miss J thought it was a great idea too.
I just added some flowers to Miss Bunny's head.
 And I am going to stitch it today for her...

a little progress.

I don't like being sick at all...and this infection has knocked me
 I like being busy and getting things done...
 I don't do REST easily...
I get frustrated cos I like being on the go.
 BUT this last two weeks I have not felt 
much like getting off the couch or bed.
 I did manage to stitch the binding on 
one of my Tassie Quilts and love the look of it.
 This pattern was what Helen Stubbings gave in our bags at our Tassie trip.
 She showed us how to do Helens way of needle-turn applique
 and I love it, it's so easy.
This was meant to be a needle holder
 but my fingers are not delicate so I enlarged it and made it a mini quilt.
 I now hav eit hanging on my Red quilt wall.
 Must run, girls finish school in 15 mins and
 I am a bit slow at getting organised.
 I will soon be back to running around crazily...
 but for now I am taking it easy...
  Stitching away in my chair while RESTING.
